You can try using different color adjustment methods, using the Preview Tool to see if any of them get you a more satisfactory output.
If not, then most likely you will need to do some post processing in After Effects with te raw output.

Entirely possible. The problem with software that runs across many OSes (and many chipsets!) is that there may be bugs specific to one or other. Unfortunately M1 support was community added, so I have no way of testing it.

When it gets stuck, its usually because of an issue with the source video file. It is waiting for a frame which never comes. You should be ok with terminating the conversion, and the video will still have been created.
